「銀河三」它是用了901號協會酵母，又稱為熊本酵母，9號酵母由被稱為「日本酒之神」野白金一所發現，一直都是全國新酒評鑑會得獎酒的常用酵母。而01的意思是低發泡性，即是發酵的時候會產生較少氣泡，令發酵的過程更加順利。而銀河三口感比較乾淨，收結清爽，香氣溫柔不會太過份，適合輕鬆飲。建議食物配搭：生蠔、海膽、海鮮。
