銀河五則是愛媛縣產酵母 “EK-7”，由自愛媛縣技術產研究所開發的，現時大部分愛媛縣的酒藏都是在用這種酵母。果香比較奔放，有如一些菠蘿，香蕉，滿滿的吟釀果香。但味道比較辛口，而且酸度較低，口感相對平淡，柔和舒服。建議食物配搭：芝士、蒸豆腐、蒸蛋。
