一開始，『酒未來』都是十四代的獨家專用米，2010年時，高木酒造把「酒未來」使用權配予其他酒藏釀酒後，紛紛釀造出各種的銘柄，引領清酒界熱潮。

現今「酒未來」這種酒米每半年一造，產量亦只有2000瓶，十分珍貴。

酒款開瓶後，帶著哈密瓜甜美香氣。略醒之後酒款帶著香蕉飴、富士蘋果、完熟梨一類果味濃郁，入口口感粗獷飽滿，但在口中轉為輕快迷人的風味。
