日本北海道，雪季從十月到四月，是不折不扣的雪國。在這雪國蘊藏著媲美蘇格蘭風味的威士忌「余市」和「竹鶴」。1934年，余市蒸餾所成立。當時余市人煙稀少，是一個大量雜草覆蓋的濕原，余市岳流下的雪水非常清澈，加上附近的石狩平原可掘出石炭作蒸餾過程的燃料，地理環境非常適合釀製威士忌。「余市」系列威士忌用石炭直火蒸餾的方法，帶有豐富持久的泥炭風味。
